Farming: organic/ biodynamic principles - Dry farming/low intervention
Winemaking: hand-harvested, destemmed (10% whole cluster), spontaneous fermentation with wild yeast in stainless & cement tanks, aged in 27% new & 73% old French oak barriques for 12 months.
