Producer: Clos Cibonne, an Iconic winery in Southern France, has become synonymous with the rare grape varietal ‘Tibouren’ which they are responsible for reviving. The Roux family purchased the estate from Jean- Baptiste de Cibon in 1793; in 1930 Andre Roux replanted the estate solely to the Tibouren grape. Today Olivier Deforge, 5th generation winemaker & vineyard manager has taken the reins, transferring to organic viticulture.
Place: Clos Cibonne has 15 hectares of vineyards facing the coast of the Mediterranean Sea, in the foothills of the Maures mountains, Provence, Southern France. This vineyard site ‘ Le Pradet’ is one of the 18 Cru Classe of Cotes de Provence.
Cultivation: Certified Organic since 2019
Cuvée: This is the estate’s famed ‘Cuvée Tradition’, which has the ability to age beautifully for at least 10 years.
Varietal: 90% Tibouren, 10% Grenache. Tibouren - a thin skinned grape varietal originally from Greece
Soil: Calcareous clay
Winemaking: Hand-harvested, direct press, native yeast fermentation in stainless steel. The wine is aged under “fleurette” (a veil of yeast, similar to the production of sherry) in 120 year old 5,000 liter oak foudre for 1 year.
