Producer: Chiara Condello started out working at her family winery ‘Conde’ in Predappio before creating her own estate in 2015, purchasing small vineyard sites, she owns 7 hectares of land, 4.8 planted to Sangiovese di Predappio, rest wood land & olives groves. She quickly became a young rising star, looking to express the history of the land, pioneering Predappio & its native Sangiovese clone.
Place: Located in the town of Predappio a subzone of Emilia Romagna, in Northern Italy - Specifically Romagna, a cooler climate for Sangiovese than Tuscany.
Cultivation: Organic & Biodynamic, minimal intervention.
Varietal:’ Sangiovese di Predappio’ from 3 vineyard parcels with different types of clay & amounts of Spungone - a Sangiovese clone native to Predappio, smaller berries with thicker skin than the Grosso clone found in Tuscany, produces wines that are more fruit forward & vivid in color.
Soil: Spungone : calcareous sandstone rock rich in fossilized sea shells (comes from the dialect word spungo, meaning spongy.)
Winemaking: Handharvested, destemmed, whole intact grapes are spontaneously fermented with indigenous yeast, open-ton tronconic wood vats, 15-25 day maceration, aging 1 year in used 3500L slavonian oak Botti, bottled unfiltered.
