Producer: Giampaolo is the enigmatic, 4th generation winemaker & farmer of the Tabarrini family, tending 15 hectares planted to vines. He took over his parents farm in the late 90’s, making some transformations while maintaining a focus on quality & sustainability, creating authentic wines that are a true expression of the land, dedicated to the native varieties of Montefalco.
Place: Located in Montefalco, a historic hilltop town in the heart of Umbria, Central Italy.
The Adarmano vineyard, planted in 1920 is 2.5 Ha, planted to old vine, ungrafted Trebbiano Spoletino, growing up fruit trees in a kind of pergola.
Cultivation: Practicing organic farming
Varietal: Trebbiano Spoletino, a native Umbrian white grape. Trebbiano covers a host of Italian varieties, many genetically unrelated. With its many faces, this one differs from other Trebbianos as a late ripening grape with an aromatic profile, holding up really well for aging, and develops greatly in flavor.
Soil: Silty Clay
Winemaking: Free run juice is used, fermented with natural yeast, 1 year of aging on the lees in a steel tank, then kept for 6 months in bottle before release - this wine has supreme ageability.
Tasting Notes: Rich & Elegant - Layers of Flavor - Quince & Ginger - Green Herbs & Citrus - White Truffle
