Producer: The Fabre family have been producing wine in the area for 14 generations, they now have 5 family chateaux in the Languedoc. Louis Fabre is at the head of the operation, prioritizing eco-conscious farming & winemaking, his wife Claire, inherited the family property, La Tour de Rieux in 2016.
Place: The vineyards are located at the foot of the Montagne Noir, a foothill of the Massif Central in the Minervois, near Carcasonne an AOC in the Languedoc-Roussillon, southern France.
Cultivation: Certified Organic & HVE (high environmental value)
Varietal: 80% Syrah, 20% Cinsault
Soil: Terraces made of pebbles, sandstone, clay & limestone
Winemaking: Handpicked full ripe bunches, de-stemmed to limit tannin, maceration for around 20 days, aged in concrete vat followed by a year in 500-liter barrels (demi-muid)
