Varietal: 50% Hondarrabi Zuri (white) 50% Hondarrabi Beltza (red) – indigenous varietals
Soil: Calcareous clay
Winemaking: The red & white grapes are picked, destemmed & co-fermented for 3 weeks with indigenous yeast, at the end of fermentation, tanks are closed preserving natural carbonation from the fermentation. Ages from 6 months on the lees in a chilled tank, preserving the effervescent character.
